Have played on all servers. Some more than others. Solclaim is still very active despite a small AC audience. But the same thing happens on all servers except Wintersebb. You level to 275 and then you start again.
On Wintersebb there seems to be a lot more "end game" participation. Doing the high level quests, collecting the best gear and frankly going well past 275. A 275 that does what the players on Wintersebb do could would whoop a standard 275 on a "leveling server" in a second on a high level quest.
So if you are an "altaholic" another server might suit you best, but if you're interested in leveling to 275 and then keep going Wintersebb would be the server for you. This makes AC a very interesting MMO again. I might even say that AC will get the crowds back again.
