I found this to be pretty useful so suggesting it to others who are interested in the info, there are some parts of these programs that are outdated but they still work very well for keeping track of ac2 data.

Download the programs from the above link (both are basically exactly the same so you only need one), I've found Expound to be better because it uses monster experience numbers the same as the ones on ac2vault, and automatically totals up the experience from monsters killed + quest experience.
In order to use it, while in-game type /logfile open, and it will create a log of all chat for the character used, after you log off later open the logfile in Expound or AC2Parser, and it will filter and format all the chat into various tabs, monsters killed, looted items, gold earned, experience earned, and even hit/evade ratios so you can figure how many of your attacks landed and missed.
